changes...

a few tweaks to the machine - a few tweaks to methodology - new burrs in one of the grinders...
amazing, but the truth is the espresso keeps getting better.
little by little.

we have a wonderful Ethiopian Sidamo in, and the Nicaragua Flor Azul is back in stock.
we'll be carrying a Kenya AA as a special in a week or so. it's glorious.

a few people have come in and said that we don't have enough dark roast coffee.
at the same time, it seems like the flavoured coffee contingent has stopped coming in.
so...

we're thinking about getting rid of the flavoured coffee and running three caffinated drip coffees each day. one would be the House Blend, one would be a Dark Roast blend and one would be a single-origin varietal.
does this sound like a good idea to you? a bad idea?

we're also thinking about getting rid of one of the two caff espresso blends from Intelligentsia (the Oromo most likely) and replacing it with an espresso from a different vendor. the idea would be to have two very different (instead of slightly different) espressos. we'd probably use the Black Cat for milk drinks and for straight shots for those who like that sort of intense coffee experience - and then go with a softer, more rounded and more sweet espresso that we'd pull for most straight shots.
good idea? bad idea?

good shots, good people, good fun

back at work.
having fun.

things are clicking now. the coffee is good, the people are nice.
we've been tasting various coffees. had a couple excellent Kenya Peaberry coffees recently. super super nice.

we've also been tweaking various espresso blends, trying to learn about coffee. i think we're closing in on it. had a really good "general purpose" PNW style one last week, and a great Trieste style one this week.
