Eastside espresso

a fun day. lots of customers, lots of drinks...
pulled some good shots. tasted a nice single origin espresso - the best i've ever had (a Brazilian Fazenda roasted to light Vienna). lots of chocolate and spice, a little fruit for subtle high notes and good body.
poured a couple nice bits of latte art.
all things considered - a good shift.

i'm getting back in the swing.
better drinks today, more consistent flow, more consistent latte art.
it's been a hard transition.

for some reason i'm struggling to pour rosettes. i can do nice hearts, and some nice rosette-style hearts - but i can't get the form quite right on the true rosette. i think it's actually the latte cups we have...

back at work. it's a tough transition.
all of a sudden all the problematic environment factors in Bishop which had been so theoretical have become very, very real.
as much as the Schomer modified Linea is a great machine - that Mistral was... well... a Mistral.

but it was great to have the regulars in, to talk about what i learned, to show off some new tricks... made me smile.

there is art back on the walls. it's nice.

and i'm home again...
