done in seattle
i'm done...
it was incredible. exhausting. amazing. overwhelming.
i'm very glad i did it.
i had some great espresso.
i learned a huge amount.
the big memorable moments were...
- one of the best shots of espresso i've had in my life (a double ristretto pulled by David Schomer using his Vita blend),
- the best latte art i've ever poured (a perfect, fine-leaved rosette in a 12oz latte cup),
- pulling off a tulip rosette on my last pour of the course (after being firmly defeated by a soy latte),
- being complimented on my skills by the man himself (when David Schomer says you're doing well... it means a lot).
Aaron De Lazzer came down from Vancouver - which was really cool.
and, in the end, i realized that, regardless of all the things we are doing "wrong"... if you were to except the espresso poured by Schomer himself, the espresso we're serving would have been right in line with what i was getting at the best places in Seattle.

wow. OK, first of all, there are so many things that i am doing wrong. it is crazy. but.... my espresso is getting better - and that was the whole point, right?
i am so envious of the baristi here. it drives me nuts. not only do they have the perfect environment for good espresso, more than that... they work in the most gorgeous, perfect espresso bars, with the most gorgeous, perfect equipment... it's killing me.
i have had three great shots so far. One at Cafe Vita yesterday. One today that Schomer pulled for me. And one today I pulled for myself.
